Crockpot Beer Cheese Soup

This beer cheese soup from the crock pot is thick, creamy, and full of flavor. Its the perfect warm food for a cold day or a party on game day.

Ingredients:

  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup beer your choice
  • 1 cup diced onion
  • 1 cup diced carrot
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 1 teaspoon dried mustard
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups shredded sharp cheddar cheese
  • 2 cups half-and-half cream

Instructions:

In a skillet, melt butter over medium heat

Stir in flour until smooth

Gradually add chicken broth and beer, stirring constantly

Transfer mixture to slow cooker

Add onion, carrot, celery, garlic, dried mustard, paprika, cayenne pepper, salt, and black pepper

Cover and cook on low for 4-6 hours

Stir in cheddar cheese until melted

Gradually stir in half-and-half cream

Cover and cook for an additional 30 minutes, or until heated through
