Ingredients:
- 2 cups shredded cooked chicken
- 1 cup salsa verde
- 8 small flour tortillas
- 2 cups shredded cheese cheddar or Mexican blend
Instructions:
Preheat your oven to 375F 190C
In a mixing bowl, combine the shredded chicken and salsa verde
Warm the tortillas in the microwave for about 20 seconds to make them pliable
Spoon a portion of the chicken and salsa verde mixture onto each tortilla, then sprinkle with shredded cheese
Roll up the tortillas, tucking in the sides as you go, and place them seam-side down in a baking dish
Top the enchiladas with any remaining salsa verde and cheese
Bake in the preheated oven for about 20 minutes or until the cheese is bubbly and golden brown
