A flavorful vegan sandwich featuring spicy shiitake mushrooms, creamy tofu-mayo spread, and peppery rocket leaves, all nestled between slices of wholesome whole grain bread.
Ingredients:
- 150g shiitake mushrooms, sliced
- 1 tbsp olive oil
- 1 tsp soy sauce
- 1/2 tsp chili flakes
- 4 slices whole grain bread
- 100g firm tofu, mashed
- 2 tbsp vegan mayonnaise
- 1/2 lemon, juiced
- Handful of rocket leaves
- Salt and pepper to taste
Instructions:
In a pan, heat olive oil over medium heat
Add shiitake mushrooms, soy sauce, and chili flakes
Saut until mushrooms are tender, about 5-7 minutes
In a bowl, mix mashed tofu, vegan mayonnaise, lemon juice, salt, and pepper to make the tofu-mayo spread
Toast the slices of bread until golden brown
Spread the tofu-mayo mixture on each slice of bread
Layer the sauted shiitake mushrooms and rocket leaves on one slice of bread
Top with another slice of bread to make a sandwich
Cut the sandwich in half diagonally and serve
