A comforting and hearty soup featuring tender chicken meatballs, nutritious vegetables, and flavorful broth.
Ingredients:
- 1 lb ground chicken
- 1/3 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 large egg
- 6 cups chicken broth
- 2 cups chopped carrots
- 2 cups chopped celery
- 2 cups chopped spinach
- Salt and pepper to taste
Instructions:
Put breadcrumbs, Parmesan cheese, parsley, onion, garlic, egg, and ground chicken in a large bowl
Mix everything together well
Form the mixture into meatballs that are about an inch across
Warm up the chicken broth in a big pot over medium-low heat
Carefully add the meatballs to the broth that is already simmering
Then add the celery and carrots
After 10 to 12 minutes, the meatballs should be fully cooked and the vegetables should be soft
Add the chopped spinach and cook for another two to three minutes, until the spinach is wilted
Add pepper and salt to taste
Enjoy while hot
