- 1/2 cup brown sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and diced

Instructions:
Preheat the oven to 350F 175C
Grease and line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal
In a mixing bowl, combine spelt flour, rolled oats, brown sugar, baking powder, and salt
Mix well
Add cold diced butter to the dry ingredients
Using your fingers or a pastry cutter, work the butter into the dry mixture until it resembles coarse crumbs
Press half of the crumb mixture firmly into the bottom of the prepared baking pan
Spread the jam evenly over the crumb base
Sprinkle the remaining crumb mixture evenly over the jam layer
Bake in the preheated oven for 25-30 minutes or until the top is golden brown
Allow to cool completely in the pan on a wire rack before slicing into bars
