Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup whole milk
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 cup unsweetened cocoa powder
- 2 tbsp instant coffee powder
- 8-10 doughnuts assorted flavors
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp instant coffee powder
- Chocolate sprinkles for garnish
Instructions:
Set the oven to 350 degrees Fahrenheit 175 degrees Celsius and grease a 9-inch round cake pan
Beat the softened butter and granulated sugar in a sizable mixing bowl until the mixture is light and fluffy
One egg at a time, add them and mix thoroughly after each addition
Add the vanilla extract and stir
Mix the flour, baking powder, baking soda, cocoa powder, instant coffee powder, and salt in a different bowl
Add the dry ingredients to the wet ingredients gradually, starting and ending with the dry ingredients and alternating with the milk
Blend until thoroughly blended
Evenly distribute the cake batter after pouring it into the greased cake pan
If a toothpick is inserted into the center, it should come out clean after 25 to 30 minutes of baking in a preheated oven
After letting the cake cool in the pan for ten minutes, take it out and let it cool fully on a wire rack
Make the mocha whipped cream while the cake cools
Beat the heavy cream in a mixing bowl until soft peaks form
Once stiff peaks form, add the instant coffee powder and powdered sugar and continue whipping
After the cake cools completely, cut the doughnuts in half lengthwise and arrange them so that they cover the entire top of the cake
Make a smooth layer of the mocha whipped cream and cover the cake and doughnuts
Add some chocolate sprinkles as a cake garnish
To allow the flavors to meld together, place the cake in the refrigerator for at least two hours before serving
