Ingredients:
- 4 large sweet potatoes, peeled and sliced into rounds
- 1/4 cup maple syrup
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 cup chopped pecans optional
Instructions:
Preheat the oven to 375F 190C
In a large bowl, toss the sweet potato rounds with maple syrup, olive oil, cinnamon, nutmeg, and salt until evenly coated
Arrange the sweet potato rounds in a single layer on a baking sheet lined with parchment paper
Bake for 25-30 minutes, or until the sweet potatoes are tender and caramelized, flipping halfway through
If using pecans, sprinkle them over the sweet potatoes during the last 5 minutes of baking
