Ingredients:

  • 1 whole fish such as snapper or sea bass, cleaned and scaled
  • 3 tablespoons soy sauce
  • 3 tablespoons fish sauce
  • 2 tablespoons fresh lime juice
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh mint
  • 2 green onions, thinly sliced
  • 1 small red chili, thinly sliced optional
  • Salt and pepper to taste
  • Lime wedges, for serving

Instructions:

Blend soy sauce, fish sauce, lime juice, brown sugar, garlic, and ginger in a small bowl

This will make the marinade

Make cuts across the fishs sides every inch or so, on both sides

Lay the fish out in a shallow dish

Pour the marinade over the fish, making sure to cover both sides

For at least an hour and up to four hours, cover and put in the fridge

Warm the grill up to a medium-high level

Take the fish out of the marinade and throw away the extra marinade

Add salt and pepper to the fish

The fish should be cooked all the way through and have a light char on each side for about 5 to 7 minutes

How long the fish takes to cook will depend on its size and thickness

Place the grilled fish on a serving platter

If you want, top it with chopped cilantro, mint, green onions, and chili slices

Put lime wedges on the side and serve
