Loaded Cauliflower Salad is a tasty and creamy side dish that goes well with barbecues, picnics, and family get-togethers. It tastes like loaded baked potatoes but is made with cauliflower instead of potatoes, so its lower in carbs but still very tasty.
Ingredients:
- 1 head of cauliflower, chopped into florets
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked and crumbled bacon
- 1/4 cup diced red onion
- 1/4 cup diced green bell pepper
- 1/4 cup diced red bell pepper
- 1/4 cup diced celery
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon ranch seasoning mix
- Salt and pepper to taste
- Chopped fresh chives for garnish
Instructions:
Put the cauliflower florets, cheddar cheese, bacon bits, red onion, green bell pepper, red bell pepper, and celery in a large bowl
Mix the ranch seasoning mix, salt, and pepper with a whisk in a different bowl
Repeat with the sour cream and mayonnaise
Pour the dressing over the cauliflower and toss it around to cover everything
Let the salad sit in the fridge for at least 30 minutes so that the flavors can mix
Add some chopped fresh chives on top before serving
Enjoy it cold
