Ingredients:
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup diced celery
- 2 cloves garlic, minced
- 3 cups chicken broth
- 2 cups sharp cheddar cheese, shredded
- 1 cup beer preferably a light ale
- 1 cup whole milk
- 1 teaspoon Dijon mustard
- 1/2 teaspoon Worcestershire sauce
- Salt and pepper to taste
- Chopped green onions and crumbled bacon for garnish
Instructions:
Melt the butter in a big pot over medium-low heat
To make a roux, add the flour and whisk it in all the time
Cook for two to three minutes, until it turns a light golden brown color
Add diced celery, onion, carrots, and garlic, and mix well
Make sure the vegetables are soft
Add the chicken broth slowly while whisking to get rid of any lumps
Put in the Worcestershire sauce, beer, milk, and Dijon mustard
Mix well
Turn down the heat, add the cheddar cheese shreds slowly, and stir until the cheese melts
Add pepper and salt to taste
Simmer on low heat for another 10 to 15 minutes, stirring every now and then
Add chopped green onions and crumbled bacon on top while the food is still hot
