Ingredients:
- 1 cup butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon Meyer lemon zest
- 2 tablespoons Meyer lemon juice
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup powdered sugar for rolling
Instructions:
Set the oven to 350F 175C and heat it up
Make the butter and sugar fluffy by beating them together in a large bowl
Add the egg, Meyer lemon zest, and Meyer lemon juice and beat until everything is well mixed
Mix the flour, baking soda, and salt together in a different bowl
Slowly add the dry ingredients to the wet ones and mix them together until they are just combined
Make little balls out of the cookie dough that are about an inch across
Coat each ball evenly with powdered sugar by rolling it in it
Spread the balls out on a baking sheet so that they are about 2 inches apart
With the bottom of a glass or your palm, gently press each ball down
After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden
After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way
